What We Eat In a Day Plant-Based

We have gotten this question from many viewers over the years here on the show, and though the answer changes and evolves over time, one thing remains the same: we eat simply and seriously love eating.

So in today’s show I share what we typically eat in a day in our whole food, plant-based kitchen. From energizing breakfast bowls packed with fresh fruits and hearty grains, to vibrant salads with home made dressings, and mouthwatering dinners that showcase the rich flavors and diverse textures of plant-based ingredients, we’ll show you how simple and satisfying it is to nourish your body with wholesome meals.

Breakfast

We are both big fans of fruit in the morning to start the day so we both enjoy a hearty bowl of various fresh and frozen fruit. Jeff also includes his mix of oat groats, buckwheat groats, and flax meal that he batch cooks each week so meal prep in the morning is quick and easy. I like to add a toasted slice of my gluten-free buckwheat bread with peanut butter and a cup of coffee.

Lunch

For lunch we tend to go big on fresh salads with various sliced and chopped veggies, beans (our video on how to cook dry beans), nuts, and seeds. We have found the key to enjoying salads everyday is choosing one of our tasty salad dressings every few days to keep some tasty variety on the menu. At this point we have created some 15 mouth watering salad dressing recipes that cover all the main salad dressing flavors are all super quick and easy to make.

Afternoon Snack

Having ready made snacks makes it easy to stay on the rails when the afternoon munchies come calling. Our go to snacks are some simple ingredient chips and our delicious oil-free homemade hummus or our to-die-for stuffed dates for a sweet tooth kick.

Dinner

Dinner is where we enjoy our most savory of meals for the day. We will choose one of the hundreds of delicious sauces and savory dishes from our catalog (in the video we chose West African Peanut Sauce) here on the site to cook early in the week and then spread over beautiful Japanese sweet potatoes that we batch cook each weekend. Sweet potatoes make for a great base with just about any meal (instead of rice) and add a whole new depth of flavor to the dish.

Blessed Dessert

After a full day of whole food goodness we both enjoy a sweet treat for dessert. Our current choices for sweetness are either diving into one of our scrumptious ice cream recipes (our current favorite is Chocolate Blueberry) or dicing up a fat slice of ripe watermelon and soaking it in fresh squeezed lime juice which tastes remarkably like sweet tarts!
