Green Beans & Stewed Tomatoes
I created this delicious Plant Based recipe to emulate a dish that is served at one of my favorite restaurants in Cary, NC. This recipe has the added benefit of being salt and oil free! It is great as a side dish or a main dish.

Equipment
Ingredients
- 2 lbs green beans
- 1 large onion, diced
- 8 oz mushrooms, diced
- 3 cloves garlic, minced
- 2 tsp onion powder
- 1 ½ tsp oregano
- 1 tsp tarragon
- ½ lemon
- 3 oz tomato paste, 3 Tbsp
- 14 oz chopped tomatoes, chopped
- 3 cups water
Instructions
- Add a few tablespoons of water to a large sauté pan
- Add the onions and let cook for a couple minutes on medium high
- Add remaining ingredients
- Lightly stir and cover
- Simmer for 15 minutes
- Take off the lid and let it cook down for another 10-15 minutes

Hi Jill. I am VERY new to plant based eating idea and I want to try to change our eating habits ( which I thought ware pretty healthy ) I would like to make the above recipe,( and a few more ) I m just worried that my family will feel like “something is missing”. You also mentioned that it could be a “side” dish. I am wondering what would you serve with it ? Your response is greatly appreciated in advance !!! Thank you
Hello Erika, we usually eat this with baked potatoes or mashed potatoes. We frequently just have meals with a mixture of sides. Baked spaghetti squash, vegan mac & cheese and scalloped potatoes are always good options

I am of Greek decent and this is one of our staples, however instead of mushrooms we add quartered potatoes. (Fasolikia)
