Green Beans & Stewed Tomatoes

I created this delicious Plant Based recipe to emulate a dish that is served at one of my favorite restaurants in Cary, NC. This recipe has the added benefit of being salt and oil free! It is great as a side dish or a main dish.

Ingredients

2 lbs green beans
1 large onion, diced
8 oz mushrooms, diced
3 cloves garlic, minced
2 tsp onion powder
1 1/2 tsp oregano
1 tsp tarragon
1/2 lemon
3 oz tomato paste ( 3 Tbsp )
1  14 oz can unsalted chopped tomatoes
3 cups water

Instructions

  1. Add a few tablespoons of water to a large sauté pan
  2. Add the onions and let cook for a couple minutes on medium high
  3. Add remaining ingredients 
  4. Lightly stir and cover
  5. Simmer for 15 minutes
  6. Take off the lid and let it cook down for another 10-15 minutes

Hi Jill. I am VERY new to plant based eating idea and I want to try to change our eating habits ( which I thought ware pretty healthy ) I would like to make the above recipe,( and a few more ) I m just worried that my family will feel like “something is missing”. You also mentioned that it could be a “side” dish. I am wondering what would you serve with it ? Your response is greatly appreciated in advance !!! Thank you

Hello Erika, we usually eat this with baked potatoes or mashed potatoes. We frequently just have meals with a mixture of sides. Baked spaghetti squash, vegan mac & cheese and scalloped potatoes are always good options
