I created this delicious Plant Based recipe to emulate a dish that is served at one of my favorite restaurants in Cary, NC. This recipe has the added benefit of being salt and oil free! It is great as a side dish or a main dish.

  • Add a few tablespoons of water to a large sauté pan
  • Add the onions and let cook for a couple minutes on medium high
  • Add remaining ingredients
  • Lightly stir and cover
  • Simmer for 15 minutes
  • Take off the lid and let it cook down for another 10-15 minutes

I am VERY new to plant based eating idea and I want to try to change our eating habits ( which I thought ware pretty healthy ) I would like to make the above recipe,( and a few more ) I m just worried that my family will feel like “something is missing”. You also mentioned that it could be a “side” dish. I am wondering what would you serve with it ? Your response is greatly appreciated in advance !!! Thank you

  3. I am of Greek decent and this is one of our staples, however instead of mushrooms we add quartered potatoes. (Fasolikia)
