I created this delicious Plant Based recipe to emulate a dish that is served at one of my favorite restaurants in Cary, NC. This recipe has the added benefit of being salt and oil free! It is great as a side dish or a main dish.

Ingredients

Instructions

  • Add a few tablespoons of water to a large sauté pan
  • Add the onions and let cook for a couple minutes on medium high
  • Add remaining ingredients
  • Lightly stir and cover
  • Simmer for 15 minutes
  • Take off the lid and let it cook down for another 10-15 minutes
