Spaghetti Squash

Squash is such an underrated vegetable. Once baked, they are so creamy, delicious and filling that you will want to include these super affordable veggies into your weekly meals! In my opinion, spaghetti squash is one of the most delicious and versatile squashes. You can eat it by itself or use is as a side dish topped with any number of delicious sauces like marinara, BBQ or one of my favorites, garlic tahini sauce.

1 spaghetti squash



Preheat oven to 400°. Cut spaghetti squash in half, lengthwise. Place face down on a parchment paper lined cookie sheet. Bake for at least 30 minutes. If your squash is large you may have to bake it for another 20 minutes. Check for doneness by pressing the skin. If the skin caves in slightly then it is done. Remove from oven. You can scrape the flesh out of the skin or just leave it in its own convenient skin "bowl". Top it with your choice of sauce and/ or steamed veggies.
