  • Preheat oven to 350°F.
  • Add the oat flour, flax meal, baking powder and soda, cinnamon and pumpkin pie spice to a large mixing bowl and stir well.
  • Add the dates, soy milk and vanilla extract to a blender and blend until dates are pulverized.
  • Pour mixture into the mixing bowl with the dry ingredients.
  • Add the apple sauce, walnuts and chopped apples and stir well.
  • Pour into a silicone bread pan or parchment lined bread tin and smooth the top.
  • Bake for 40 minutes.
  • Let cool before slicing. Keep in a container in the fridge for up to a week.

    Jill, this apple spice loaf was delicious, moist, and subtly sweet with a lovely amount of spices…we love it! I wanted to use Cripps Pink apples because those are my favorite and a perfect balance of sweet and tart (to me, anyway!), but I couldn’t find them so I used Pink Lady Apples. The loaf had a nice crumb to it and did not get gummy. I was careful not to over grind the oats. I had quick oats on hand so I only ground them for 7 seconds in my Ninja Foodie. Watching your accompanying video is always so helpful to learn little things like that. I followed the recipe exactly except for adding ¼ tsp salt just because my family prefers that touch of salt in baked goods…but it was such a small amount for a whole loaf. Thank you for this healthy fall treat 🙂 !
