Salad
- 3 large carrots shaved into ribbons with a vegetable peeler
- 1 tbsp sesame seeds toasted
- ½ tsp crushed red pepper flakes
Dressing
- ¼ cup rice vinegar
- 2 tbsp white wine vinegar
- 2 tbsp lime juice
- 2 tbsp sesame seeds toasted
- 1 tsp miso paste red
- 4-5 deglet dates or 2 medjool dates
- ½ tsp onion powder
Instructions
Salad
- Add the carrot ribbons to a medium size mixing bowl and add 1 tbsp of the toasted sesame seeds and the red pepper flakes.
Dressing
- Add all of the dressing ingredients to a blender and blend until the dates are completely pulverized.
- Pour the dressing over the salad and toss together.
- Keep in an airtight container in the fridge for up to 5 days.
