

Vegan Tea Loaf

- 1 ½ cups dried fruit mix raisins, currants, goji berries, diced apricots, dates.
- 1 ½ cups earl grey tea or black tea
- 2 cups oat flour
- ½ cup arrowroot flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp cinnamon
- 1 tsp orange zest
- 1 cup soy milk unsweetened, or plant based milk of choice
Instructions
- Preheat oven to 350°F.
- Soak the dried fruit in the tea for at least 4 hours or overnight.
- Add the oat flour, arrowroot flour, baking powder and soda, and cinnamon to a large mixing bowl and whisk together.
- Add the soaked dried fruit, orange zest and soy milk and stir well.
- Pour into a loaf pan and bake for 1 hour.
- Keep in an airtight container in the fridge for up to 2 weeks.

I can’t tolerate oats or gluten, is there a suitable substitute for oat flour that you would recommend?
Also, thank you so much for sharing your recipes. I really appreciate them and obviously so do many other people ?
I haven’t tried any other substitutes but using almond meal usually works in my other recipes.
You can try cassava flour or tiger nut flour. They’re gluten free and versatile.
