Ingredients
 
 

  • 1 ½ cups dried fruit mix raisins, currants, goji berries, diced apricots, dates.
  • 1 ½ cups earl grey tea or black tea
  • 2 cups oat flour
  • ½ cup arrowroot flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 1 tsp orange zest
  • 1 cup soy milk unsweetened, or plant based milk of choice

Instructions
 

  • Preheat oven to 350°F.
  • Soak the dried fruit in the tea for at least 4 hours or overnight.
  • Add the oat flour, arrowroot flour, baking powder and soda, and cinnamon to a large mixing bowl and whisk together.
  • Add the soaked dried fruit, orange zest and soy milk and stir well.
  • Pour into a loaf pan and bake for 1 hour.
  • Keep in an airtight container in the fridge for up to 2 weeks.

    I can’t tolerate oats or gluten, is there a suitable substitute for oat flour that you would recommend?
