Ingredients
- 2 cups rolled oats organic
- 2 cups pecans lightly chopped
- 1 cup pumpkin seeds
- ½ cup dates chopped
- 2 tbsp nutritional yeast
- 2 ½ tsp pumpkin pie spice
- 1 ½ tsp cinnamon
- ½ cup dates
- ½ cup pumpkin purée
- 2 tsp vanilla extract
- ½ cup water
Instructions
- Preheat oven to 325°F.
- Add the oats, pecans, pumpkin seeds, chopped dates, spices and nutritional yeast to a large mixing bowl and stir well.
- Add the remaining ingredients to a blender and blend until smooth.
- Pour the blended mixture over the granola in the bowl and mix well.
- Spread mixture onto a parchment lined baking tray.
- Bake for 10 minute increments stirring each time for up to 60 minutes.
- Let it cool thoroughly before putting it in an airtight container.

At least a month. That is the longest I have stored it before it is gobbled up.

A good long while. Probably a couple months in an airtight container. Doesn’t have to be refrigerated but will keep longer if it is.
