- 3 tbsp white wine vinegar

Instructions
- Add all ingredients to a blender and blend until smooth.
- Keep in an airtight container in the fridge for up to a week.

My husband’s diet is does not permit any nuts or seeds. What would you recommend as possible replacements for the cashews in the Vegan Cilantro Lime Dressing? It does look so very delicious!!!

I use organic hummus as a substitute for the cashews. It’s so delicious!
silken tofu worked fine as a sub for the cashews. increase all the remaining ingredients by a third.
Using cannellini beans is a great option or a little tofu.

If I don’t like vinegars would adding lemon or lime change the taste too much?
I think lemon juice might do ok but I haven’t tried it. Maybe just try a half batch just in case

I used silken tofu instead of the cashews for the cilantro lime dressing and increased the remaining ingredients by a third. I thought it improved overnight. Both dressings were great.
I also steamed the carrots for 10 minutes (because cooking carrots increases the available nutritional benefits, I think). Both of these dressings improved overnight. They will become regulars.

I subbed half the cashews for garbanzo beans with some of their liquid, and used 1 date, a whole jalapeno, and extra cilantro and lime juice. Love this! My kids loved it too! I poured it over a quinoa, black bean, amd mango salad. Super good. Can’t wait to try the other dressing!
Just made the cilantro lime dressing! Super yum! I only had 1 small lime, so I used it’s juice and the juice of 1/2 lemon (but I still added 1 TBS white wine vinegar). I used 1 TBS golden raisins instead of dates, and I added approx 2 more TBS water (just because I like it a bit thinner). It’s delicious! Thank you!
A follow up question: Jill, have you made the cilantro lime dressing substituting oats in place of the cashews (like you use in other dressings). If so, did it turn out as well? If not, do you think it would? Thanks!
It always tastes best using the nuts or seeds in dressing recipes but I think you could substitute up to half with oats and still get the great flavor and silkiness from the fat in the nuts or seeds.
Thanks so much! This is how I have been making (using 1/2 oats and 1/2 cashews), and it turns out delicious every time (and I make it quite often!). This dressing has been a hit with everyone is my household (p.s. for garlic loving folks, I tend to put in 2 cloves garlic instead of one). Thanks again!
