

Happy Belly Soup
Did you over indulge during the holiday? This light and delicious Vegan Happy Belly Soup will aid in recovering a healthy digestion and in bringing your digestive system back into balance. Super quick and simple to make, you can double the batch and freeze half for later.

Ingredients
- 1 small onion diced
- 2 cups broccoli broken into small florets
- 1 cup spinach frozen
- ¼ cup quinoa uncooked
- ¼ cup red lentils uncooked
- 1 tbsp dark miso paste
- 1 tsp fresh ginger minced
- ¾ tsp fennel seed crushed
- 1 ½ liter vegetable broth low sodium
Instructions
- Sauté onions and ginger adding a splash of the vegetable broth to keep them from sticking.
- Add the remaining ingredients and cook on medium high for 20 – 30 minutes or until the lentils are fully cooked.
