Farro isn’t just for savory dishes anymore. This Plant Based Vegan breakfast bowl uses farro as the base creating a rich and satisfying warm cereal. Farro is an ancient grain that has more nutrients, protein and fiber than rice or oats so it is the perfect food to start your day with. Top with dried figs, apple chunks, toasted pecans and cinnamon and you have a perfect winter breakfast.

Ingredients
 
 

  • 1 cup dry farro
  • 2 cups water
  • ¼ cup dried figs, diced
  • ½ apple, diced
  • ¼ cup toasted pecans , or nut of your choice
  • ½ cup almond milk, unsweetened, or plant milk of your choice
  • cinnamon, sprinkle

Instructions
 

  • Soak farro with 2 cups of water overnight
  • Pour off the water in the morning
  • Put farro into a pan with 2 cups of water and cook for about 10 minutes or until soft
  • Place 1/2 of the cooked farro into a bowl and top with remaining ingredients
