Vegan Pumpkin Spiced Latte

It’s Fall! And you know what Fall means. Pumpkin Spiced Lattes! But, here’s the deal. This latte is healthy, only sweetened with dates, is low calorie AND it is suuuuuper delicious. Oh yeah, did I forget to say that this latte is also going to save you a TON of money. That is a bonus I figured I throw in =)

Get ready to make yourself a rich and creamy pumpkin pie in a cup. This is going to make you want to snuggle up in front of the fireplace with a comfy blanket and a great book!

I created this recipe because my youngest daughter loves it along with a lot of you. I had gone to that one place that makes them ( we all know who that is ) and I asked them to make one for her with almond milk instead of milk and then I had an idea that I should ask what is in the pumpkin puré that they put in it. It is pumpkin puré, sweetened condensed milk and sugar among a number of other things that I had know idea what they were. =(

My Recipe!

Double espresso shot or regular coffee
2 dates
2 Tbsp pumpkin puré
1 cup almond milk ( or any other plant based milk )
1/2 tsp pumpkin pie spice 

Warm almond milk in a pan and then add to your blender along with all of the other ingredients and blend until smooth and creamy. Enjoy!

      I usually do double espresso or if you are using regular coffee then 1/2 cup
