

Vegan Inside Out Stuffed Cabbage Soup

Ingredients
- 1 onion diced
- 2 stalks celery diced
- 8 cups cabbage chopped
- 1 cup lentils rinsed and soaked overnight or at least 3 hours
- ½ cup brown rice uncooked
- 14 ounces diced tomatoes 1 can
- 1 liter vegetable broth low sodium
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp cracked pepper
- ½ tsp cumin
- 2 tbsp tamari low sodium
- 4 cup water
Instructions
- Sauté the onions and celery for a few minutes.
- Add the remaining ingredients except for the water and simmer until cabbage is cooked down, about 20 minutes.
- Add the water and let simmer until lentils are soft. Approximately 20 minutes.
- Store in an airtight container for up to a week.

It’s 3° here today in the upper midwest and I have all of the ingredients to make this soup. I might also add a vegan parm to the top and will make a homemade bread in the bread maker.
Made this last night. I sautéed the onion and celery then dumped the rest in the instant pot and set it for 5 min. It was really good. Used regular soy sauce and added a bit more as our tastebuds have not yet adjusted to healthy plant based eating. Will be making this often. Thank you, Jill for all your recipes and the hard work you do in wanting viewers to be healthy. Looking forward to working on healthy in 2025.

Will this still work without soaking the lentils ahead of time? I’ve not seen that in a recipe before
You can but it takes the soup a lot longer to cook for the lentils to soften.
