  • Sauté the onions and celery for a few minutes.
  • Add the remaining ingredients except for the water and simmer until cabbage is cooked down, about 20 minutes.
  • Add the water and let simmer until lentils are soft. Approximately 20 minutes.
  • Store in an airtight container for up to a week.

  1. It’s 3° here today in the upper midwest and I have all of the ingredients to make this soup. I might also add a vegan parm to the top and will make a homemade bread in the bread maker.

    Made this last night. I sautéed the onion and celery then dumped the rest in the instant pot and set it for 5 min. It was really good. Used regular soy sauce and added a bit more as our tastebuds have not yet adjusted to healthy plant based eating. Will be making this often. Thank you, Jill for all your recipes and the hard work you do in wanting viewers to be healthy. Looking forward to working on healthy in 2025.
