Ingredients
 
 

Salad

  • 1 ½ cups shelled edamame
  • 3-4 cups cabbage diced or shredded
  • 1 cucumber chopped
  • 1 carrot shredded
  • 1 cup spring onions diced
  • ½ cup peanuts * roasted
  • 1 tbsp sesame seeds toasted
  • 1 tsp ginger minced

Dressing

Instructions
 

Edamame

  • Cook the edamame in a pot of water for 10 minutes.

Salad

  • Add all salad ingredients to a large mixing bowl.

Dressing

  • Add all dressing ingredients to a blender and blend until smooth.
  • Pour dressing over salad and mix.
  • Keep in an airtight container in the fridge for up to 4 days.

Notes

* If eating entire salad within 1-2 days add the peanuts. If it is in the fridge for more than 2 days it is better to add the peanuts to individual servings so they don’t get soggy.

  1. The name of this recipe indicates that edamame is in it but the list doesn’t include it. How much does it call for?

  2. The recipe doesn’t have the 1.5 cups of edamame. I watched the video to make sure what the edamame amount was.
