

Vegan Apple Turnovers

Dough
- 1 cup sweet potato purée preferably white sweet potato
- 1 cup almond flour
- ⅔ cup oat flour
- 1 tbsp flax meal
- 1 tbsp nutritional yeast
- 1 tsp lemon juice
- ½ tsp vanilla extract
- ½ tsp turmeric only if using white sweet potato
Filling
- 3 cups apple small chunks, half honey crisp, half granny smith
- 8 deglet dates or 4 medjool dates
- 1 tbsp arrowroot powder
- ½ cup water
- 1 tsp cinnamon
- 1 tbsp white wine vinegar
- 1 tsp vanilla extract
Drizzle
- ¼ cup cashews add all drizzle ingredients to a bowl and let soak for at least an hour
- 3 deglet dates
- ½ tsp vanilla extract
- 1 tsp lemon juice
- ⅓ cup water
Instructions
- Preheat oven to 350°F.
Dough
- Mix together all dough ingredients and divide it into 6 pieces.
Filling
- Add the apple chunks to a saucepan and place on medium heat.
- Add remaining ingredients to a blender and blend until dates are pulverized.
- Pour this mixture over the apples and cook for 5-10 minutes until the apples are just slightly soft.
Assembly
- Take each dough piece and roll in into a ball.
- If using the tortilla press, line it with parchment. Place the dough ball on the press and press gently until dough disk is at least 6 inches in diameter.
- Gently peel back the parchment and place disk on parchment lined baking tray.
- Spoon a small amount of the apple mixture to half of the disk, then gently fold the remaining half over the apples matching the opposite edge so that it creates a half circle shape. gently press the open edge shut to keep the apple mixture in.
- Repeat for the remaining 5 dough balls.
- Bake for 30 minutes.
Drizzle
- Add all of the drizzle ingredients to a blender and blend until smooth.
- Drizzle over each turnover or pour mixture in a small bowl to use as a dip.

The dough came out really sticky and it was hard to roll out to look good. Any advice? I used a rolling pin.
I usually roll it out between 2 sheets of parchment. You can always add a little more oat or almond flour too.
