Vegan Sausage Biscuits and Gravy

Sausage Biscuits and Gravy is the ultimate comfort food so let's make it Whole Food Plant-Based! This Vegan version of biscuits and gravy is done in the southern style which is a little spicy. The soft biscuits are smothered in a rich, creamy and slightly spicy gravy chocked full of vegan sausage chunks.

Sausage Patties Dry sauté mushrooms until all of the water is released and reabsorbed.
Halfway through cooking the mushrooms add the garlic.
Add all sausage patty ingredients to a flood processor and pulse until mixture sticks together.
Make patties with your hands and place on a parchment lined baking tray.
Bake for 15 minutes.
Flip sausages over and bake for another 10 minutes.
Biscuits Add the flour, baking powder and baking soda to a mixing bowl and mix well.
Blend the cashews and water in a blender until cashews are completely pulverized.
Pour blended mixture into the flour mixture and stir gently together. Don't overmix or the biscuits will be hard.
Spoon and shape biscuits gently onto a parchment lined baking tray.
Bake for 10 minutes.
