Vegan Chocolate Pudding

This Vegan, Dairy-Free Chocolate Pudding is a special recipe that I get to share with you. I have fond memories of both my Grandma and Mom making chocolate pudding from scratch and serving it in bowls while it was piping hot. It was the most special treat especially in the middle of our extremely cold Nebraska winters. I have adapted the recipe to be vegan and refined sugar free for all of you to enjoy with me.

Instructions

  • Put the oats, cashews, dates and water into the blender and blend for at least 1 minute
  • Strain first in a wire strainer
  • Pour into a nut milk bag or cheese cloth and strain
  • Pour that liquid into a saucepan and add the vanilla and cocoa powder
  • Cook on medium high heat while stirring with a whisk until desired thickness
  • Eat hot or pour into a Tupperware and place into the fridge for at least a couple hours
