These cookies are called Everything Cookies because they have a little bit of everything in them. What they don’t have, is gluten or oil! There is a tiny bit of sugar if you include the chocolate chips and cranberries but other than that, they are sweetened by banana and dried fruit.
These cookies were inspired by a recipe my grandma used to make called Cowboy Cookies. They were a basic oatmeal cookie but she added anything she had left over like a handful of raisins, the remainder of what was left in the shredded coconut bag, walnuts and sometimes even potato chip crumbles!  They were soooo yummy!
This version of her cookie is all whole food goodness. Heck, you could even eat them for breakfast.

Ingredients

Instructions

  • Preheat oven to 350°
  • Add all ingredients to food processor and pulse until mixture sticks together
  • Make into balls ( makes 16 golf ball size )
  • Place on a parchment paper lined cookie sheet
  • Press cookies flat with another piece of parchment
  • Bake for 15 - 25 minutes ( 15 if you like soft, 25 if you like a little crunch )
