Gluten Free Vegan Pancakes

Weekends just aren’t the same without pancakes. Light and fluffy, smothered in blueberry sauce, these pancakes are the perfect way to start your weekend. One of our family’s favorite times of day to eat pancakes is dinner time. Breakfast for dinner! We usually pair them with roasted potato squares and fresh fruit.

Ingredients

1 cup oat flour
1/2 cup buckwheat flour
1 tsp baking powder
1 Tbsp flax meal
2 dates
1 tsp vanilla extract
1 tsp apple cider vinegar
1/2 banana
2 cups unsweetened almond milk (or plant based milk of your choice)

Blueberry Sauce

1 10-12 oz package frozen blueberries

 

Instructions

For Pancakes

  1. Place all dry ingredients into a mixing bowl and stir.
  2. Put remaining ingredients into a blender and blend until smooth.
  3. Pour mixture from blender into bowl with the dry ingredients and whisk together.
  4. Pour ladles full of batter onto a preheated non-stick pan.
  5. When bubbles pop in batter then flip.
  6. Cook other side until golden brown.

For Sauce

  1. Pour frozen blueberries into a pan and cook on medium/high heat.
  2. As they are cooking mash with a potato masher.
  3. Cook until thickness desired.

I like this recipe. I tried it with basil, and oregano in the soak water, and I made large ones to make pizza crusts. It worked out fine.

Super recipe! Can I use rice flour instead of buckwheat flour to make it still fluten-free?

Thank you. Looking forward to trying but from my research oats are not gluten free. They contain a different type of gluten. It’s not only wheat that contains gluten. I think it’s a confusing issue but good to flag up. Anyone else heard anything different?

Bob’s Red Mill also has GF oats I buy at my health food store. In Montana, Montana Wheat also sells oats and GF oats.

Another tip- I use the Buckwheat flour and I sub Quinoa flour for the Oat flour sometimes. It works well in this recipe. Also….thanks Jill for all of your hard work, I watch your recipe videos on YouTube also!

These look great! Do you think I could bake the mix n a silat? Also, can I can make my own buckwheat flour (grind the groats in my Vitamix)?

I’m out of bananas, I might try substitute applesauce as a sub. These sound yummy, GF too!
