Weekends just aren’t the same without pancakes. Light and fluffy, smothered in blueberry sauce, these pancakes are the perfect way to start your weekend. One of our family’s favorite times of day to eat pancakes is dinner time. Breakfast for dinner! We usually pair them with roasted potato squares and fresh fruit.

Blueberry Sauce

Instructions
 

For Pancakes

  • Place all dry ingredients into a mixing bowl and stir.
  • Put remaining ingredients into a blender and blend until smooth.
  • Pour mixture from blender into bowl with the dry ingredients and whisk together.
  • Pour ladles full of batter onto a preheated non-stick pan.
  • When bubbles pop in batter then flip.
  • Cook other side until golden brown.

For Sauce

  • Pour frozen blueberries into a pan and cook on medium/high heat.
  • As they are cooking mash with a potato masher.
  • Cook until thickness desired.

  1. I like this recipe. I tried it with basil, and oregano in the soak water, and I made large ones to make pizza crusts. It worked out fine.

  2. Thank you. Looking forward to trying but from my research oats are not gluten free. They contain a different type of gluten. It’s not only wheat that contains gluten. I think it’s a confusing issue but good to flag up. Anyone else heard anything different?

      1. Bob’s Red Mill also has GF oats I buy at my health food store. In Montana, Montana Wheat also sells oats and GF oats.

  3. Another tip- I use the Buckwheat flour and I sub Quinoa flour for the Oat flour sometimes. It works well in this recipe. Also….thanks Jill for all of your hard work, I watch your recipe videos on YouTube also!

  6. I’ve made these pancakes over and over again and they came out perfect every time – until this morning when I discovered my usual pan has been distroyed from the last use. So my pancakes stuck to the bottom 🙁 The only other pan I have left is a cast iron pan. Jill, do you think this (great) oil-free recipe will work in a cast iron pan?

    I tried sooooo many banana pancake recipes, and this one worked perfectly. It gave just enough fluff. I added an extra tsp of baking powder, because I have a sodium free paking powder. And I needed to eliminate the flaxseed meal. Other than that, this will be my go to pancake recipe.
