In this show we walk through an in depth demonstration of how to water sauté: caramelizing onions without oil, veggie broth sauté: using homemade vegetable broth instead of water to sauté, and oven roasting vegetables with veggie broth instead of oil. Instructions
 

  • Cube potatoes and stir in all seasonings and potatoes in large bowl
  • Spread out on parchment paper lined cookie sheet.
  • Cook potatoes for 30 minutes at 400 degrees Fahrenheit.

You have listed 3 tbspoons vegetable broth, how do I use it in roasting the potatoes.

You mix it onto the potatoes along with the spices before you bake them.

Do you ever save the liquid left after deglazing the pan you used to caramelize the onions, to reuse as a kind of veggie broth?

Leftover aquafaba liquid would work too, from canned or home cooked garbanzo beans (I make hummus from scratch). If I boil any vegetables I save that too and use it for sautéing and baking veggies.

Do you use stainless steel plans? Would this work with ceramic or Swiss Diamond pans as well?
