It is finally spring so it is time to crack out the spring salads. Just like a home our bodies can use a good spring cleaning treatment so what better than a salad that is loaded with power cleaning antioxidants! Each rewarding bite is filled with a little bit of tang, a little bit of sweet and a little bit of creamy goodness. Your tastebuds and your body are going to be so happy when eating this wonderfully springy salad.

Ingredients
1 lb broccoli, cut in to small bites
1/4 cup red onion, diced
1/4 cup dried cranberries
1 cup blueberries
1 apple, diced
1/3 cup sunflower seeds
1 cup water
2 tsp white wine vinegar
juice of one lemon
2 medjool dates
1/2 cup cashews
1 Tbsp poppy seeds
Instructions
- Add the broccoli, onion, cranberries, blueberries, apple and sunflower seeds to a large bowl and stir to mix
- Mix the water, vinegar, lemon juice, dates and cashews in a blender until smooth
- Pour the sauce over the salad mixture and stir until well coated
- Sprinkle on the poppy seeds and stir

Very good, I added teaspoon of mustard but otherwise made per instructions. Will definitely make again.
