Summer calls for a lovely light salad dressing. This recipe is perfect for those who are looking for a delicious low fat dressing and with it being strawberry season, that is the fruit of choice. I especially enjoy this dressing on arugula salad with toasted walnuts and chopped red onion.

    I am almost never a fan of sweetness in my salad, but I had some strawberries to use so I made this dressing. I had to substitute the vinegar so I used red wine vinegar instead, the dressing came out great. People who like sweetness in/on their salad (i.e. everyone else besides me!) will love it, you do not miss the oil, sugar or salt. Thanks Jill, another great recipe!

  2. This dressing is fantastic. I make a deep green salad, and toss in a fruit (chopped mango, chopped apple, sliced oranges or grapes) or what ever fruit you prefer and toss with this Strawberry Vinaigrette. No fat, sodium or sugar. For those who don’t prefer a sweet dressing, I have learned to adjust the amount of raisins to control this. This works well with other fruit has well. Thanks Jill for this wonderful addition to my kitchen staples. Jeff
