This is a soup recipe that is so filled with flavor that you will never forget it! Sabzi is a Persian dish that typically has meat but I have made a vegan version for you and also made it into a soup because that is what my family has really grown to love. They love it so much that they ask for it every week! Not only does it taste great but it is loaded with nutrition. Bonus!
2 onions, roughly chopped
2 cloves garlic
2 potatoes, diced
1 can coconut milk ( lite if you want it low fat )
1 can tomato paste
2 cans kidney beans
6 cups spinach
4 cups water
1 tsp turmeric
1 tsp pepper
2 tsp dried lime
1 tsp Braggs liquid amino acids
- Saté onions in 4 Tbsp water until translucent.
- Add remaining ingredients except for the spinach.
- Simmer for 10 minutes
- Add the spinach and cook for 25 minutes.
