What is better than sitting in your cozy chair with a good book, a steamy drink and chocolate chip cookies? Superfood Chocolate Chip Cookies are! Now you can have all of these comforts and none of the unhealthy oils, sugar and dairy products that are in normal chocolate chip cookies.
This recipe was created from a recipe of Talia Fuhrman’s.
Her recipe is for Goji Berry Almond Butter Scones. I loved her recipe so much that I adapted the recipe a bit and made them into cookies. My husband absolutely adores them and likes to eat them with a large glass of unsweetened soy milk. I hope you enjoy them too!

Ingredients
1/2 cup peanut butter
1/2 cup soy milk
8 medjool dates
1 cup almond flour
1 cup oats
1/4 cup flax meal
1/2 cup goji berries
1/2 cup cocoa nibs
1 ripe banana
1 Tbsp vanilla
Instructions
- Put everything into a food processor and blend until well combined.
- Scoop out globs onto a parchment paper lined cookie sheet.
- Press them down with another piece of parchment paper.
- Bake at 350 degrees for 20 min.

What kind of peanut butter do you use? I am sticking with Dr Fuhrman and can’t have oil.
I use Smucker’s Organic. It is only roasted peanuts and a little salt!

Would it make a difference if I turned the oats into more of an oat flour before adding it? If my kids see oats they may not eat the cookies. 😉

Thank you for sharing this recipe. I love chocolate chip cookies and this whole food plant based recipe is awesome. I used almond butter and craisins because I didn’t have peanut butter and goji berries at hand. Next time I’ll use gojiberries.
