Watermelon Obsession

Watermelon, my latest obsession. I just can’t seem to get enough of it. It could be due to the sweltering heat and humidity of NC right now. We have been buying them, cutting them into bitesize chunks and storing them in the fridge in tupperware. There is nothing more refreshing on a hot day than a big bowl of super cold watermelon.

Luckily watermelon is packed with all kinds of nutrition benefits.

  • loaded with vitamin C
  • magnesium
  • potassium
  • selenium
  • lycopene
  • vitamin B-6

These are just a few of the nutrients contained in this 92% water containing fruit. As an added bonus, it is super low in calories! The health benefits are too numerous to even list them.

Why not fill up on them and reward your body with its healing properties while they are so plentiful and affordable. Eat all the lovely reddish-pink flesh you want but don’t forget about the rind. The rind actually has more nutrients than the flesh! Of course it isn’t quite as palatable but you can chop of a chunk and throw it in the blender with some ice and water and you have a super nutritious, refreshing summer drink.
