Delicious Indian curry over avocado slices to make your palette sing. This Vegan Chickpea Vegetable Curry recipe is a Nutritarian take on a traditional dish where we have replaced the oils, salt, and meat with nutrient-packed whole food goodness and eye watering flavors! This meal fully qualifies as Nutritarian, Vegan SOS Free (No animal products, salt, sugar, or oil), Vegetarian, gluten free.

Ingredients
3 onions
1 inch chunk of ginger finely chopped
1 red pepper chopped
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp garam masala
1/2 tsp chili powder
2 cans chopped tomatoes
1 large sweet potato chopped
1/2 cauliflower chopped
3 cans chickpeas
1 Tbsp Braggs liquid amino acids
3/4 cup raisins
2 cups water
Instructions
- Add a few tablespoons of water to a large pan.
- Fry onions, ginger, red pepper and spices for about 5 minutes.
- Add remaining ingredients and cook on medium high for 20 minutes or until sweet potatoes are soft.
- Serve over rice or avocado chunks =)

Not a stupid question at all. Most curry powders have cardamom which is a spice my husband doesn’t like. π

I think it does just print the whole page. The website is from a pre-made template which doesn’t have that option, sorry. Maybe in the future we will be able to get that changed.

Thanks so much for the recipes! We love curry & use both home blended & commercially blended curry powders. If I use my curry blend or a commercial curry blend, (we love cardomam), I substitute three (3) teaspoons for the 6 spices listed, correct? Thanks again! π

Thank you, I thought that was to much ,so 2 cups would be 660 calories for this meal alone .
This recipe is soooo gooood, I didn’t add the cream so it might be a little less calories.
